2 15 oz Cans diced fire-roasted tomatoes (slightly drained)
1 Medium Serrano or Jalapeño pepper (leave seeds in to kick up the spice)
1 cup Chopped fresh cilantro (remove the majority of the stems)
1 Medium Lime, juiced (3-4 Tbsp)
.5 cup Chopped white or red onion
1 Tsp Ground cumin
.5 Tsp Sea salt
1 Clove Garlic (crushed)

Cane sugar or sugar substitute of choice to taste
3-5 Tbsp Green Chiles (if you want to kick the heat up more)
Directions
- Add tomatoes, pepper, cilantro, lime, onion, cumin, salt, and garlic to food processor or blender and pulse to mix. You're looking for a well-blended but semi-chunky salsa.
- Adjust the flavor to your preference by adding ingredients such as salt for saltiness, lime for tartness, garlic for a spicy kick, cilantro for a herbaceous flavor, pepper or mild green chilies for heat, and stevia or sugar to balance the heat with sweetness.
