Ingredients

  • 2 Medium sweet potatoes, thinly sliced

  • 2 Green onions, finely sliced

  • 1 Tbsp Cornstarch

  • 1 Tbsp Chili powder

  • 2 Tsp Smoked paprika

  • 1 Tsp Garlic powder

  • 1 Tsp Mustard powder

  • 2 Tsp Kosher salt

  • .5 Tsp Freshly ground pepper

  • 1 Tbsp Vegetable oil

  • .75 Cup Sour cream

Directions

  • Preheat oven to 350°. Place two wire racks onto two large rimmed baking sheets. Toss sweet potatoes in oil until evenly coated.
  • In a separate large bowl, whisk together spices and cornstarch. Add sweet potatoes and toss until evenly coated in spice mixture.
  • Arrange the sweet potatoes in a single layer on wire racks and bake for 25-35 minutes until they appear crispy and dry to the touch. Note that they will continue to crisp upon cooling.
  • While the sweet potatoes are cooling you can make your dip. Fold the green onions into the sour cream.

Notes

  • If you don't slice the sweet potatoes thin enough they won't crisp up.
