Ingredients

  • 1 small/medium sized cauliflower cut into small bite sized florets

  • .5 cup brown rice flour or gluten free flour if you wish

  • 1 Tsp Garlic Powder

  • 1 Tsp Onion Powder

  • 1.5 Tsp Paprika

  • .5 Tsp Cumin

  • .5 Tsp Sea Salt

  • .25 Tsp Cayenne Pepper

  • .25 Tsp Black Pepper

  • .75 Cup of Unsweetened vegan milk of choice (I used cashew)

  • Buffalo Sauce Ingredients
  • .25 cup white vinegar

  • .25 cup of water

  • 1 Tsp Garlic Powder

  • 1 Tsp Paprika

  • .25 Tsp Cayenne Pepper

  • .5 Tsp Sea Salt

  • 3 Tbsp Tomato Paste

Directions

  • Line a baking sheet with parchment paper and preheat your oven to 450 degrees F. (Or an air fryer can be used set to 390 degrees F.)
  • In a large bowl, place chopped cauliflower. In another bowl, mix flour and seasonings, then add the milk and stir until batter forms. Pour batter over cauliflower and mix until evenly coated.
  • Place your coated cauliflower on your prepared baking sheet, in a single layer and bake for 20 minutes. Flip them 10 minutes into the bake.. (If using an air fryer, set it to 20 minutes and pull the basket out and shake it about every 5 minutes.)
  • While that is cooking, prepare your buffalo sauce by adding all its ingredients to a small sauce pan. Whisk to combine and simmer over medium heat 3-5 minutes.
  • Remove the cauliflower from the oven, and coat the bites in your buffalo sauce. You can toss them or brush them. Tossing is much quicker, but may not be as even. Then return to the oven for 10-15 minutes, flipping again once halfway through. (If using the air fryer, cook another 10-15 minutes. Remember you want them to be good and crispy, but not burned!)

Notes

  • For best results lay your bites out on the tray evenly spaced after they are sauced when you are sending them back into the fryer or oven.
